Cooking with seasonal produce is often much cheaper and it couldn’t be more true for this courgette bake.
The green vegetable can be bought for well under £1 in most UK supermarkets and pairs perfectly with pantry staples like onions and carrots.
Sharing the dish on her food blog Penny’s Recipes, Penny Ritson said: “Courgettes (or zucchini) are in season in late summer and yet they are available at quite a low price all year round in the supermarket.
“This courgette bake is very easy to make and is prepared in minutes to bake in the oven. Made with vegetables, eggs and cheese it is very tasty too!”
The cost of this recipe depends on individual supermarket prices, but Penny claimed that it averages at around £4 for four people – (£1 per portion).

Serves four:
- 375g courgette, grated
- 125g mature cheddar cheese, grated
- 125g self-raising flour
- Five eggs
- Two rashers of bacon cut into small pieces (optional)
- One onion, diced
- One carrot, grated
- One teaspoon dry mustard powder (optional)

Method
Like all one-pot recipes, a good pie dish is essential for an even bake that doesn’t stick.
That said, the first step should be to source one of these to hold four people’s worth of ingredients and grease it well.
Once the dish has been prepared, preheat the oven to 180C and move on to making the mixture.
This couldn’t be easier as the hardest part really is grating the vegetables. Do this using the same side of a cheese grater to ensure the produce cooks at the same time.
Add the fresh produce into a large mixing bowl and crack in the eggs, stirring well. Slowly add the sieved flour until smooth, then fold in the grated cheese and mustard powder.
Bake in the oven for 40 to 45 minutes until the pie is fully cooked and top with extra cheese if preferred.
Penny said: “Serve with a baked potato as they can be baked alongside the courgette slice or your favourite vegetables.
“It is very easy to cook and very tasty as well as being suitable for home freezing.”
